Default I'm considering updating my "PB" plumbing myself. Would I be biting off more than I c

I've just done some basic plumbing(crimping, pinch clamps, solder, replace fixtures etc) and I figure I can do this but don't know exactly what I'm getting into. But I'm hoping it will be as easy replacing each section of pipe and can be done incrementally as I'm sure it will take me some time. As far as I can tell my plumbing goes from the main pipe where it comes in and up the side of one bedroom, then up to the attic then spreads out to the rest of the house. So my assumption is all I have to do is cut into the walls at each point in the house where the lines come out(bathrooms, kitchen, laundry, ext faucets, and water heater) then crawl around the attic and replace each section 1x1. Does it get much more complicated than this? Also, must it be done all at once or can I do it incrementally over time?

The only problem I can foresee is the connection from the new piping to the old. Can you find fitting that will make this connection?

I was thinking just use pex fittings as I've read they're the same outer diameter as pb. I was just checking then out at the store and videos and almost bought the crimp tool and some "pinch clamps" vs the regular crimp ring method for a leak repair. So I'd have to test on one I guess. But I'd imagine the barb fittings would do their internal job and the pinch clamps would do theirs on the outside

Otherwise is the hardest part crawling through the attic hunting down each section? Hehe, actually sounds tempting to pay a plumber 3 grand and call it a couple days. Or just have fun playing in my walls every weekend. Idk. Just thinking about it.
